Ingredients:
- 2 cans of Sardines in Olive Oil (Comur)
- 1 sheet of puff pastry
- 1 can of roasted red peppers
- 3.5 ounces of brown sugar
- 1 egg
- Roasted red peppers

- The same weight in sugar
- 1 cinnamon stick
Preparation:
- Roll out two squares of puff pastry and place half a roasted red pepper on each square, then add two sardines in olive oil (Comur) on top. Use the oil from the sardine can to seal the puff pastry around the sardine and draw scales on the sardine (a good option for kids to help with!), then brush with beaten egg.
- Bake in a preheated oven at 350 degrees Fahrenheit for 8 minutes until golden brown and serve with red pepper compote and green salad.
Red Pepper Jam:
- Place everything in a saucepan and let it boil. Blend the mixture with a hand blender until it forms a puree and finish with a teaspoon of vinegar
