Fresh Roasted Cod Salad

Ingredients

  • 1 can of roasted cod

  • 1 cup of cooked chickpeas

  • ½ red bell pepper, chopped

  • ½ yellow bell pepper, chopped

  • ½ small onion, chopped

  • 1 handful of lettuce (or mixed greens)

  • 1 tablespoon of extra virgin olive oil

  • 1 tablespoon of lemon juice

  • Salt and black pepper to taste

 

Preparation

  1. In a large bowl, mix the chickpeas, bell peppers, onion, and olives.

  2. Tear the lettuce leaves and add them to the other ingredients.

  3. Add the roasted cod in pieces, gently mixing to keep it from breaking apart too much.

  4. Season with olive oil, lemon juice, salt, and black pepper to taste.

  5. Stir gently and serve immediately.
